蛋白制取工程 植物蛋白具有动物蛋白不可比拟的营养特性和功能特性

近年来,由于植物蛋白具有动物蛋白不可比拟的营养特性和功能特性,植物蛋白被广泛应用于食品、饲料行业,相继开发出各种高蛋白食品、减肥食品及蛋白膜等产品。用低温粕粕制备浓缩蛋白、分离蛋白有广泛应用前景。
1 浓缩蛋白是以低温粕为原料,通过除去低温粕中的可溶性糖分、灰分及其他可溶性微量成分,使蛋白质的含量提高到65%-70%。
2 分离蛋白是碱溶酸沉法制备,首先将脱脂粕用稀碱液浸提后,用离心分离除去粕中的不溶性物质(主要是多糖),然后用酸把浸出液的PH值调至蛋白质的等电点,蛋白质凝聚沉淀下来,经分离得到蛋白沉淀物,再经洗涤、中和、干燥得到分离大豆蛋白。
花生蛋白粉加工技术:
花生除含油量高达46%~52%外,蛋白质含量高达26%~32%,比牛奶、猪肉、鸡蛋都高(牛奶为3%,鸡蛋为14%,鱼肉为25%,猪肉为16%,小麦粉为9.9%),而且花生蛋白中90%以上为球蛋白,含18种氨基酸,包括人体不能自身合成的8种必需氨基酸。其中,除蛋氨酸含量较少外,其他7种均接近或超过联合国粮农组织(FAO)的规定标准。
我公司近年来一直致力于植物蛋白的研究,结合美国ADM和CENRTALSOY公司技术,成功开发出了花生蛋白和大豆蛋白加工技术。

Protein Production Project
In recent years, plant protein has incomparable nutritional and functional properties than animal protein. Plant protein is widely used in food and feed industry, and is then used to develop various high protein foods, diet foods and protein membrane. It has the wide application prospects to use low-temperatured meal to produce protein concentrate and isolation.
1. The low-temperatured meal is used to produce protein concentrate. By removing the soluble sugar, ash and other soluble micro constituents in the low-temperatured meal, the protein content can be increased to 65%~70%. 
2. Protein separation uses alkali extraction and acid precipitation. First, extract the defatted meal with sigwater, and remove the insoluble substance in meal with centrifugal separation (mainly polysaccharide); next, adjust the PH value of extraction solution by acid to the isoelectric point of protein, and then protein condenses and precipitates. The soybean protein can be separated from the protein precipitation through washing, neutralization and drying.

Peanut Protein Powder Processing Technology:
The oil content of peanut can reach 46%~52%, and protein 26%~32%, which is higher than milk, pork and egg (milk 3%, egg 14%, fish 25%, pork 16%, wheat flour 9.9%). And peanut protein contains over 90% globulin and 18 kinds of amino acids, and 8 of which can't be synthesized by the body itself. Moreover, it contains less methionine and all the other seven amino acids are close to or above the required standard of Food and Agriculture Organization (FAO).
In recent years, our company has always been committed to the research of plant protein. By combining the American ADM and CENRTALSOY technology, our company has developed the peanut and soybean protein processing technology.
